From the Latin crispus, meaning crisp, the word crêpe
is French for pancake. Their origins are found in
Brittany, the northwest region of France. Until
recently, crêpes were cooked on large cast-iron hot
plates heated over a wood fire. They were made of
buckwheat flour and used as bread; rarely filled with
the scrumptious delights we enjoy today.
Of course today, creperies specializing in sweet and
savory crepes are found throughout France and other
parts of the world. Crepes are now considered a main
course and are often stuffed with a variety of
ingredients including the savory fillings of seafood,
poultry and tender garden vegetables. Sweet crepes
tickle the palette with delightful fruits, nuts,
sauces, and ice cream. Because of their weightless
nature, crepes are growing in popularity as a
healthy-fare option to fast food.
In France, crepes are a special serving on Shrove
Tuesday and symbolize family life, good fortune and
future happiness. It is customary to touch the handle
of the frying pan and make a wish while the crepe is
turned. It is said that those holding a gold coin in
their free hand will be showered with good fortune in
the months to follow. In earlier times, rural farmers
offered crêpes to their landowners as a symbol of
allegiance.
Traditional crêpes are recognized by a variety of
names including: the Italian crespelle, the Hungarian
palacsintas, Jewish blintzes, Scandinavian plattars or
stuffed pancake, Russian blini, and Greek kreps. But
